There's an UNDO function on the iPhone.

When you've when pasted or cut wrongly (or just typed incorrectly), shake your phone up and down (like an EtchASketch :-) and it gives you an UNDO dialog. It works for several changes back.

The only disadvantage is that you look silly when doing it :-)
